If you're min-maxing Thief 3 is practically a requirement for dual wield hand crossbow builds. BG3 reworked Thief to get two Bonus Actions, which you can use to make hand crossbow attacks. So with hand crossbows on Thief at level 3 you basically hit the same Action Economy that Martial classes get at level 5 when they get Extra Attack.
